The weather is finally starting to brighten up (here’s hoping for another UK heatwave this summer!) so I’m finally starting to looking forward to eating fresh, tasty salads for dinner again. I don’t know about you, but I can’t bring myself to eat a salad in winter – no matter how tasty it is. But I absolutely love them on a warm sunny day.

This week, Gousto have a new recipe on their food box menu and it caught my eye with it’s colourful appearance. That’s enough to make it into this week’s Food Box Menu blog post. Not only can I imagine coming home from work and whipping up this simple recipe for a healthy mid-week dinner, but I also think it would make a fantastic addition to a summer BBQ with family and friends.

So what’s involved in this recipe? Well it only takes 35 mins to make (which I expect will mostly be allowing the vegetables to roast). It’s vegetarian and gluten free making it suitable for a range of diets, and contains 3 of your 5 a day – result! Aside from the ingredients provided in the Gousto recipe box with their meal kit (see below for the full list), all you need is olive oil, pepper and salt – cupboard staples.

At just just 433 calories per serving, it’s a super healthy dish for those of you like me that are trying to eat as many healthy meals as possible. (Ok, I eat healthy dinners so I can eat more chocolate but let’s skip that part.) Nutritionally it packs a punch with 25.4g of protein per serving, coming from the lentils and feta cheese. While it is slightly higher in saturated fat and sugars, this is all coming from fresh, quality and nutritious ingredients that all make up part of a healthy balanced diet.

I can’t wait to try this recipe and based on the 1292 reviews averaging at 4.5 stars, I don’t think I’m going to be disappointed. You can even whip up something similar without a Gousto box. As a result, of course you miss out on the easy to follow recipe card and you’ll have to face the dreaded task of chopping a butternut squash yourself (no thank you).
